Italian Biscotti Recipe

I had made many Biscotti and always enjoy the cookies with good coffee. I have many recipes on biscotti but I could not find my favorite because I like lot. Thought you might interest in trying this recipe.

Loretta Bianchi's Italian Biscotti Recipe (by CookEatShare Cookbook)

Ingredients

1/2 c. butter
1 c. sugar
3 Large eggs
3 c. sifted flour
3 teaspoon baking pwdr
1/2 teaspoon salt
1 teaspoon vanilla
1 tbsp. anise seed, crushed
2 tbsp. grated lemon rind
2 tbsp. grated orange rind
1 c. minced almonds or possibly walnuts

Directions

1. Cream butter and sugar. Add in Large eggs one at a time till fluffy. Sift flour, baking pwdr and salt. Stir into butter mix till thoroughly mixed. Add in remaining ingredients and stir.
2. Divide dough into 3 parts. Shape part into roll 1 1/2 inch diameter. Place on cookie sheet and flatten top slightly. Bake for 20 min. Remove from oven and cut into 3/4 inch slices. Return to oven, cut sides up and brown another 10-15 min. Cold on wire rack. Bake at 350 degrees. Makes 60 cookies.
