0 Recipe for Chicken Liver

Chickens
I really like chicken livers for some reasons that no one in my family will steal my snack or wanting a sample of chicken liver. Always bought some whole chickens and will collect all livers for the snack in future until a container is full. Then I will cook and make one of recipes for pate. So I can have it on my favorite crackers. I always made a decision about which one recipe I want to use for my own tasty pleasure. I like to be more adventure in trying some new recipes.

    0 Country Pate Recipes

    For long time, I have found one restaurant, in Twin Cities, Minnesota, that served their own country pate. That one I ordered along with good glass of best red wine. One of best pates I ever had eaten. After that, I had enough troubles to find one in Portland, OR—little disappointment that I didn’t find one restaurant that served the kind of classic French Pate beside I had worked in a bistro (this place had served rabbit pate, very good one.)

    Well, sometime, my wife will threatening me by telling me she will throw the chicken livers out of freezer when it is full in container. Every time I have whole chicken, I will search for chicken liver and keep them for good pate. Always like my homemade pate on my nice crackers along with good red wine. Tell you the truth, my wife don't like my pate and make sure that I ate all of it--to make her happy.

    2 Book Review: The Harbinger by Jonathan Cahn

    This blog, I knew, is not the subject of food for first time, are my own opinions in humble way that I want to say. I don’t care if anyone agreed with me or not. It is my opinion, my own belief, and, my knowledge, not come out of my head and it only come out of my understanding that I may understand. If you are not sure what I am talking about, please check with your pastor, your preacher, or your other version of Benny Hinn. Or, check your Bible to see if anything you agree with or not. If it is pretty touchy subject, I suggest you to look other blogs in my blog, thank you.

    If you want to know about me, I, myself, am an Universalist Christian. I used to smoke, I used to swear and I used to drink. I ate pork and bacon. Like it or not. Look for just decent Christian, I suggest you go to church and be one of them or learn something new from Bible. This is your options of two ways you can take.

    Finished the book in one day and started to ponder about what the book really said about the prophecies or warning signs, or harbingers of future that will come. All writing are in fictional settings. Again and again, in my mind I was referred to verses that remind me about any prophets who claimed they received the messages from High Power. I remembered the verses that I have to wait and confirm that a person is really a prophet that God had sent him to bring the messages or just other false prophet who think he is. 



    One book got me into thinking more: if it is really happened from Sept 11, 2001 and aftermath. I had my doubts but I preferred to see something happens in future. Each time I think about that book, I remember the verses in Deuteronomy and had made my decision about wait and confirming everything that writer told his audience the truths that he received.

    "I will raise up a prophet like you for them from among their fellow Israelites. I will put my words in his mouth and he will speak to them whatever I command. I will personally hold responsible anyone who then pays no attention to the words that prophet speaks in my name. "But if any prophet presumes to speak anything in my name that I have not authorized him to speak, or speaks in the name of other gods, that prophet must die. Now if you say to yourselves, 'How can we tell that a message is not from the LORD?' —whenever a prophet speaks in my name and the prediction is not fulfilled, then I have not spoken it; the prophet has presumed to speak it, so you need not fear him."

    It is pretty difficult for me to follow but I cannot emphasize on anything more than I learned more about what is in Old Testament indicated me different way. I don’t have a reason to believe, I rather read and understand the Bible really say than whatever preacher told me or writer told me. Within a book, there are some touchy subjects of prophecies that writer claimed as truth. I am not going to say that I follow him—I preferred to see if that really come true or other embarrassments in Christianity, like Pat Robertson and Jerry Farwell. His writings come to one verse in Isaiah 9:10, turned it into whatever harbingers--I don't want to give more details about this verse, it is very pretty creepy verse that got me thinking if this is true or not. I wish this author write more than just what in Isaiah but I was amazed by how simple way that he wrote very well due to his Jewish Christian background and express how much he understood all the purposes of harbingers according to the Scripture. With all reading a book, I checked Bible to see if an author used the verses accurately--He did very well. Good book to read but I have my own opinion to protect me from any false teachings from so-called Christians who claimed to be someone so special. Know more about Bible is the best weapon to protect you and me from scriptural twisting Christians, and as the guidance to know more about God. I have to stand on the verses in Deuteronomy for some reasons that I want to confirm that everything are true instead of letting me into what I don't want to embarrass myself for believing.

    I wish I could give you more explanations in reading the prophets. I had realized that Scriptures are the example about what happening to Israel and other nations that are written in prophecies, give me more insights about the example of warnings to them, will happen to present nations that don't follow God's way. I wish it is very easy to talk more about, I could not.

    Personally I don’t fear a person when someone claimed to be, as one told me or tried to convince me with many bible verses or trying to scare me about the future like December 21, 2012 craps or tried to spook me about the raptures. Only few verses still stick to my mind which made me more stronger than anyone tried to scare me. I preferred to stand up and wait until I confirmed that something will come, came true that God had sent him or her. I want to be responsible for confirming the truth according to Scriptures.

    Whatever in a book I read, I will investigate to make sure anything in Bible that an author or authoress accurately interpreted and correctly quoted.

    In past I had read many fantastic books with prophecies, my understanding had changed, and turned me into different person after reading Bible with the heart of understanding that I had made my requests from God. Bible already gave me many troubling thoughts that caused me to leave the Churchianity on my own exodus due to many discoveries in Bible.

    More you know, the Bible is best weapon and best antidote against any false teachings--if you really know more, otherwise you are other Christians who don't understand the Scripture. I have to say that I am very humble reader, stay away from bragging about how much I knew--I don't want to get bite from other brother or sister in Christ. Eager to learn more when I can.

    Sorry if I did not give any glowing happy or heart warming review on this book like I had seen some reviews. I wish I could but give more respects to the fellow Christians for standing in their faith.

    0 Cookbook Review: La Cuisine by Françoise Bernard

    I bought the cookbook, La Cuisine by Françoise Bernard, for the reason I knew pretty good about French Cuisine which is my main specialty during my 25 years of culinary experience. Since few years ago, I start to realize that, in my viewpoint, every Chef have their specialty, not their best skills but specialty that they have knowledge. There are few Chefs who had worked with me, acknowledged and recognized my good skills in French Cuisine, not that American stuff that are common served in the hotels. I knew I am not that best in Asian cuisine unless I learned something new from other good Asian Chefs. That is different than everyone think of Chef. You can insult me with French toasts, I might want to ask you to make liverwurst sausage for me. Make hollandaise sauce for me? The traditional Coq au Vin?

    Sometime I felt that I had met someone, and they seemed that they didn’t get it right with Chef things—like thought that I knew about everything.  Really, at 75 % of what I knew but 25, I don't. I learn easily than you think because of my experience and my ability to decipher the recipes out of seemingly hard to understand recipes. With the craft of my skills , I agreed with the article, 10 things entrepreneurs can learn from Chefs by crowdSPRING blog and I think everyone should read and learn more about Chefs. If you think I just cook the food without a recipe, you are mistaken. For some reasons, I have recipes: consistency and food costing before serve it to customer with good menu price. How can I sling all craps in pan without knowing the real price in mixture of cheap and expensive food? If you still think like this, you are mistaken again. I found myself I agreed with Chef from Dora's Table, that she mentioned the use of recipes and many cookbooks in bookshelf. Yea, I am one of Chefs who collected many cookbooks and using them for inspiration and specific technique in making certain food like make a perfect beef stock for your restaurant. I had collected  the cookbooks, varied from Auguste Escoffier to Food and Wines Annual cookbooks.

    With this cookbook, I have the pleasures in learning something new from the recipes. I can understand this cookbook in a familiar tone with French Cuisine. There are no difficult recipe to understand, are well-written  with common senses of Culinary Arts.

    When you visit my home, you can check my collection of cookbooks and you will know my soul.

    0 Iron Chef Fake?

    I had watched Iron Chef America several times. I like the show but what I am thinking about the actions in the kitchen stadium and started to question the timing of show and the timing of cooking. I have opinions about the timing of cooking but reflected on the impossible plan to accomplish the competition within one hour. 

    I read other articles, from blogs and news, and had reached the conclusion of Iron Chef America. In reality of culinary life, I worked the plan by using the logic timing with cooking. I had noticed some problems with food that you need to cook quickly in short period.  And other recipes that will take two days from the start to end.

    I had asked myself some questions about how Iron Chefs suddenly found their creativity in planning the cooking. I already know about planning the menus--need to take more time to plan the food…and using the recipes to make and achieve what I want the food to taste good. With Iron Chef-like competition, how can I deal with real artichokes—it will take the time to break 50 artichokes into bottoms. With gigantic fish, it will take time to break and clean. I had watched and wondered if they really do it or just pre-clean fishes. Didn’t see fish guts during the show. I can go on the listing of food by looking up Escoffier cookbook.

Crying again. Have to find a fresh clean towel to wipe my face from crying. Few time I had chopped fifty pounds of yellow onions-peeling, halving, and slicing before dicing. Have to cook the onions for French onion soup, and for Lyonnaise sauce. Or rings for nice hamburger garnish. Slice thick for onion rings.
    When I got home, my wife sent me to shower. You know the evil onions. Onions rule!

    Other than some fake shows, I started to get bored of Iron Chef America. Sorry, In few years ago I was very interested in their competition between whatever gladiators start to cook without killing each other. For some reasons I like to watch, I can learn something new from Chefs—plate presentations, techniques, and amazing creativity. Until one point, I started to wonder if they are really competed or just working on the plan with certain ingredients ahead of time before the show. Started to notice how skillful the Chefs are but…the plan to make and be done within one hour—I am not sure. Look at Chopped show and see how Chefs took on mysterious  ingredients from baskets. They succeeded to win or lose with good intention of their skills.

    My opinions changed from watching so much of these two shows in hospital for a month stay, learned so much from the performances with amazing creativities (from Chopped). With all the skills I have, I have to take time to create amazing gourmet food on plates, by utilizing my knowledge of culinary expertise, and using the recipes from an authoritive source, as such as, the Escoffier cookbook and other cookbooks that I had followed faithfully in past. Plan the work ahead of time until the time is up like I worked in Banquet, in kitchen working with other Chefs and on line-cooking with all ingredients that I used for cooking are within reach.
     
    I would like to write something nasty about Iron Chef America but I could write how ridiculous show it became. Now you know that you are not Iron Chef at all. I don't care so much if you are that because I already knew how much some certain food will take the time from start to finish. Please check the links to the truth.
